A Guatemalan heirloom that belongs to the Banana group of squashes. 

A hard to find variety that produces a 8-10 pound, slate blue squash with a golden yellow flesh. 

Guatemalan Blue is an excellent table quality squash.

Slice off just what you need and keep the rest in the fridge. 

We love to roast them on the bbq pit.  Very rich flavor with a creamy texture.
