Pasilla Bajio Pepper Seeds (85 days)

Also called "Chile Negro". 

The name in Spanish means little raisin which refers to the wrinkled skin as this pepper dries. 

Pasilla Bajio hails from Mexico like many hot peppers. 

Although classified as a hot pepper, it is much more mild, rich, smoky and perfect for mole sauces.

Pasilla Bajio forms strong, upright plants that produce 8-10", thin walled, slender, green-black peppers. 

Use this pepper fresh in enchilada sauce or salsas.  Use it dried and powdered in Mexican mole sauces.
