Chives, what can't you do with chives?!  They are great grown in patio pots, planted in the garden, used as borders and companion planting.  It is said that chives love carrots and improves their growth.  Chives also can deter carrot flies and planted under roses to help control black spot. It can also make an excellent organic insecticide, control fungal infection, mildew and scab.  What organic gardener can go without chives or chef for tha matter?

Of course EVERYONE knows how to use chives in cooking from fish to baked potatoes.  It has so many uses, but did you know you can make a tasty vinegar out of the blossoms? 

Don't forget to dry plenty of chives in the solar drier to give away at Christmas.  People just love homemade organic herbs as gifts. It couldn't be easier!

Chives are also rich in vitamins A , C, contain trace amounts of sulfur, and are rich in calcium and iron.

Chive blossoms attract bees, butterflies and other beneficial insects to your garden.

Herbal Lemonade Boil 2 cups of water and pour over a 2" sprig of rosemary OR 1 heaping tablespoon of lavender flowers. Steep for 5-8 minutes and then remove herbs. Add 1/3 c. sugar or honey and stir to dissolve. Pour into a 1 quart jar and add 1/4 c. lemon juice. Fill the rest of the way with cold water. Chill and taste, adjusting lemon and sweetness to taste. Serve over ice, with a small fresh sprig of rosemary or lavender if you like.
