Little Fingers grow in clusters that almost look like hands. 

They grow in clusters of 3-5 purple, slim fruits. 

You can start harvesting when they are only as big as your finger or let them get bigger. 

Either way they will taste mild and sweet. 

Very productive. 

Great in stir fry or grilled.

Planting Tips:

A tropical plant, likes warmer temperatures.  Will be slow to develop in cooler temperatures.  Soak seeds overnight to start in greenhouse 2 weeks before last frost.  Transplant out at about 8 weeks or when temperatures are consistently above 65 degrees.  Needs good, fertile soil and adequate moisture.

Seeding Rate:

35,000-40,000 plants/acre,

Heirloom seeds are hardy, but always take care with your garden seeds to give them the appropriate amount of moisture - don't let the vegetable seeds dry out prematurely, and don't overwater and possibly have them rot.


Egg in a Plant

Here is a deliciuos take on Egg in a Basket, Toad in a Hole or One Eyed Jack.

  • 1 eggplant
  • 4 eggs
  • salt and pepper
  • green onion

Slice eggplant into 1 inch thick segments.

Grill on high heat 3-4 minutes, reduce heat to medium.

Cut a hole in the center.

Crack an egg into the hole and cook until egg is desired consistency, flipping if needed.

Add salt and pepper and garnish with green onion.
